This is a cookbook we came across when we traveled through Texas a few years back. It has a lot of great recipes in it, but one we really like is their Brisket Rub. Both of these gentlemen have cooked at wagons and have had their own catering companies. There is a lot of experience under those hats and they have done some big events including Presidents. Tommy Lee Jones did the forward for the book. If you see one, pick it up, you won't be disappointed.
2 Tablespoons freshly ground black pepper
1 Tablespoon kosher salt or sea salt/we use Lowrys
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried parsley
1 Tablespoon chili powder
1 teaspoon oregano/we use Mexican oregano
1 teaspoon sugar
Mix all ingredients till blended
We usually 4x the recipe and keep in the spice cupboard and use it on other beef as well. Its great on beef tenderloin.
