I came up with this recipe in order to feed our men’s brotherhood breakfast once a month at our church.
3 dozen eggs, scrambled
3 lbs pork sausage, chopped
1 large red onion, chopped
1 large white onion, chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
2 lbs hash brown potatoes
Pre-cook all the ingredients individually
Mix all cooked ingredients, season to taste
Serves 20-30 people
