One of the things we like to do here is try out new recipes out of new cookbooks that arrive. We were doing research on Arizona cookbooks and came across the Arizona Historical League. They are a gem for our State. They have some really cool information on their site including in depth articles about people who shaped our state including, the Honorable Sandra Day O'Connor, Eddie Basha, Ben Avery, Joe DiMaggio to name a few. They also sell their cookbooks on their site to raise funds for their endeavors, they have 3. One of the criteria to be in the books is you must have been in business for a minimum of 50 years. That's a long time in the restaurant business. To have that many in our State is pretty impressive. This is the Navajo Taco from the Cameron Trading Post.

We spiced up the ingredients a little but it came out really good, actually one of the better one's we have had. They are at pretty much every festival. I really like the one's they make with Lamb at the Heard Museum Indian Fair and Market. The one at El Tavor is pretty good as well. Had one for lunch when we took the train to the Grand Canyon from Williams.
