Potato Pancakes, or in certain circles, Latkes. These are a great breakfast or side dish. Served with eggs and bacon, really nice.
3 Cups shredded potatoes
1/4 cup onion fine minced
6 Tablespoons flour
1 teaspoon salt
2 eggs unbeaten
3/4 teaspoon baking powder
1 - 4oz can diced green chili's
Mix all ingredients together, than add potatoes and mix well.
Heat 1/2 cup vegetable oil
Spoon in desired amount of mixture/slightly flatten
Fry until golden brown on both sides
Dry on paper towels
Keep warm in oven until all are done
Serve with your favorite topping, sour cream and chives, pico de gayo, salsa.
You can substitute the potatoes with grated zucchini and add 1/4 Parmesan cheese.
Dry your shredded potatoes as best you can in a colander or on paper towels, the drier the better.
