This is a recipe we found on the Sunset magazine web site, www.sunset.com You do not see these particular squash's in the store all that often but when you do, pick a couple up and try this out. It is really good. We roast the squash on the outdoor grill to give it a little smokey flavor. Let us know how you liked it. We also roast extra Pepitas ( pumpkin seeds) to put on salads, really adds a great flavor and crunch.
